Cheese Straws

Ingredients
- 2 stk butter, room temperature, cut into tablespoons
- 8 oz Parmigiano Reggiano, very fine grate
- 8 oz sharp cheddar or Gruyere cheese, very fine grate
- 3/4 t Dijon mustard
- 2-1/3 C all-purpose flour, soft wheat
- 1/4 t salt
- 1 t baking powder
- 1/2 t cayenne pepper
Instructions
- Beat the butter in a bowl until soft. Add all the cheese and continue beating until the mixture is smooth. Add the mustard.
- Whisk together the flour, salt, baking powder and cayenne. Add to the cheese mixture and mix. Form into a ball.
- Use a cookie press to form 4" x 1/2" straws on a lined cookie sheet, or roll the dough to 1/3" thick, cut into 4" x 1/2" long strips, and lay these on the cookie sheet.
- Bake at 375 for 8 to 12 minutes, then cool on a rack.
- Plate and serve.
